Rhubarb Drink

Rhubarb’s in season.

Colorful, tangy and fresh,
a taste of spring.

Here is one way you can enjoy rhubarb.

You’ll need:

1 kg rhubarb

250g sugar in the raw
2 liters water
3 organic lemons, quartered
3 stalks of mint
25g ginger

Chop the rhubarb into small pieces and rinse it with cold water. Add the rhubarb, sugar, mint and lemons. Heat the water and add the rhubarb, sugar, mint and lemons. Boil it for 3-4 minutes, removing any foam that forms on the surface. Remove from heat. Let mixture sit for 15-20 minutes, then strain the liquid and discard the rest. Serve chilled.
