Blueberry Oat Bake

This delicious oat bake is both healthy, nutritious, and tasty. Don’t skip the nut butter – it’s what makes all the difference! You can make the butter while the bake is in the oven.
Serves 4-6
This is what you need:
200 g oats
1 tbs baking powder
1 ½ tbs cinnamon
½ tsp salt
1 tsp pure vanilla extract
350 ml milk or plant milk of your choice
2 tbsp olive oil
2 egg
2 ripe banana
150 g frozen blueberries
2-3 tbsp honey
3 tbsp apple sauce
Method:
• Preheat oven to 180°C.
• Mix all the dry ingredients in a bowl and set aside.
• In another bowl, mash the bananas with a fork. Mix in the eggs. Add the vanilla extract, applesauce (if using), honey, milk and olive oil and mix again. Set aside.
• Pour the wet ingredients into the dry ingredients and
combine with a spoon.
• Take out the frozen blueberries and stir in lightly just to spread them around. It’s important that the blueberries are frozen – if they are starting to defrost, they will turn the oat bake all blue! Pour the mixture into a 20 x 24 cm baking dish.
• Bake for 35 – 45 minutes, or until golden on top.
• Let cool for 10 minutes before serving.
• Serve drizzled with beurre noisette, recipe below.
Beurre Noisette
100 g good quality, organic butter
Melt the butter in a saucepan over medium heat. After a few minutes it will divide into three layers – foam on the surface, milk solids at the bottom and a clarified butter in the middle. Scoop off and discard the foam.
Let the butter cook until the milk solids at the bottom start to get toasted, become aromatic and impart a hazelnut color to the butter. You will smell it when it happens.
You can control the nuttiness and the intensity of the butter by varying how long you cook it before straining it from the milk solids.
Beurre noisette keeps for a long time in the fridge. Use it on oatmeal, pancakes, waffles and pasta for that extra touch. Don’t hold back, it’s just so delicious!
